Overnight Oats

Don’t know about you, but I love waking up to a warm brekkie that I don’t have to prepare… and even better if it is healthy, filling and of course yummy!!

We discovered overnight oats a few years ago and we love them. They are a staple for me, and my 11 year old daughter often loves making hers too.

One feature I love is that they are a great meal prep recipe as you can make several portions at once and eat throughout the week. As most of my recipes, they are also very flexible and can be fully customised!

Here is what I use for one portion but I usually scale it up to make at least 4-5 portions which keep fine in the fridge for almost a week:

• A jar or other single portion container. A wide mouth will make your life easier.

• 1/3 to ½ cup of stabilised rolled oats

• ½ tbs of make-your-own peanut butter (I like to set the machine to crunchy!)

• 1 tbs of chia seeds

• A splash of maple syrup or honey

• 1 cup of frozen berries (or you can use fresh if in season)

• Water to cover ¾ of the contents

Assembly is very easy, just put all ingredients in a jar, seal and store in the fridge! When you wake up, take the lid off the jar, pop it in the microwave for about 1 minute, and enjoy!

As a possible customisation, you might like to add some seeds or nuts, though I suggest you do that just before eating, otherwise they will go mushy in the water. (That’s why I love to add crunchy peanut butter, it provides the texture of nuts, but it can be added when I make the recipe).

For other possible versions, try adding in different berries or fruit (like grated apple), and maybe experimenting with a few spices. My daughter loves cinnamon and I think cardamom might also work well.
