Crackers

Ingredients:

250 grams stale bread, 1 tsp paprika, 1 tsp tomato paste or tahini, 1 tblspn extra virgin olive oil, 1 tspn salt, 125ml water, 1 tblspn poppy or carraway seeds, 1 tspn cracked blk pepper, extra salt to season (optional)

Instructions:

Preheat oven to 150C

Blend bread in a food processor until it turns into a crumble. While it’s mixing, add the tahini, olive oil, and salt; then a slow drizzle of water until the ingredients turn into a thickened cream consistency. Mix in seeds.

Spread the mixture onto a baking tray lined with baking paper and use a spatula to spread out evenly, about 1/2cm thick. Sprinkle over the seeds, pepper, and a sprinkle of salt and place in oven for about 25 – 45 mins or until golden and crisp. Keep an eye on it as the cooking time will vary depending on the typr of bread used, amount of water added.

Remove from oven and allow to cool then gently break apart (if they haven’t naturally broken into chunks) and place in an airtight container until ready to use. Serve with Everything Dip (recipe featured) & enjoy!

Banana Peel Bacon

Marinate for 1-2 hrs banana peels in a combination of:
soy sauce, onion or garlic powder, salt, sugar, paprika, pepper.

Fry or roast in a pan until charred

Lemon Peel Powder

Dry out lemon peels in oven – low temperature (around 60 degrees) for around 1-2 hours.
Process into a powder.

Optional: add salt (to make a savoury seasoning) or leave as is to add to sweet dishes.

Onion Peel Powder

Rinse onion peels and pat dry with a towel

Dry out in oven low – temperature (around 60 degrees) for an hour.
Process into powder.
